Original Hungarian goulash or goulash soup is always prepared over an open fire without a lid so that the smoke from the fire can draw into the kettle; This creates the typical smoky taste of the food. A lid is needed only after cooking to protect the food from falling leaves and to protect against insects.
The lids fall (about 2-3 cm) into the kettle. This is necessary so that possibly occurring in the boiler overpressure can escape easily.

The lids are not suitable for fish kettles!
